Tips, Tronc, VAT & NIC
See the true cost of every service-charge decision, split it fairly by hours, points, bands or equally, and export the compliant documents the Allocation of Tips Act demands.
Mise – as in mise en place – is the entire back office in one place: tips & tronc, labour costed to the minute, a staff time clock, GP & menu engineering, allergens, training & compliance, invoice and sales imports, Inspection Mode, a Venue Health Score and a morning copilot that reads it all. Your numbers, on your machine – no spreadsheet graveyard, no five-figure system.
Your free trial is the real thing: the full product runs in your browser with sample data – nothing to install, no card. Buy to keep your own data, with every rate and rule kept current whenever the law changes.
What's inside
See the true cost of every service-charge decision, split it fairly by hours, points, bands or equally, and export the compliant documents the Allocation of Tips Act demands.
Live wage-cost % against target, the fully-loaded cost of each shift (not just base pay), and automatic minimum-wage and break/rest flags.
Dish costing, food and drink GP, VAT-correct pricing, and a menu matrix that tells you which dishes to promote, reprice, fix or cut.
A red/amber/green board of every certificate and its expiry, renewal reminders, and a one-click audit report for inspections.
Build dishes, auto-flag the 14 allergens, and print the matrix and PPDS labels in seconds instead of dreading it.
Every morning: one screen, no searching. Overdue checks, expiring training, projected labour overspend, supplier price rises – each line a rule over your own records, with the record one tap away.
Staff clock in and out with a PIN on the venue device. Labour is costed to the minute against the roster – and overtime costs nothing until a manager approves it.
Every product you buy, split cellar and kitchen. Between counts the board depletes itself from your daily sales through dish recipes – so each count prices the variance: waste, spillage and shrinkage in pounds, not guesses.
Two sites? Five? Each is a complete Mise on your machine, and the Sites view lays them out in one table – takings, labour, approvals waiting, expired certs, last cash variance – names clickable, one tap to step inside. Import a venue's weekly backup and it joins the table too.
Attributed, minute-stamped fridge and freezer readings with corrective actions on the record, printable for the EHO. Plus a waste log that prices every binned gram and deducts it from expected stock – so variance means something.
Drop in a PDF invoice, a stock-take spreadsheet, or a screenshot of the till's end-of-day report. Mise reads it locally, you review every line, and prices, stock and sales land where they belong. No POS integration required.
The EHO arrives; you press one button. Training, allergens, check history, calendar, certificates – laid out with a printable pack. And one Venue Health Score tracks the lot, explainably.
The flagship – and the bit that pays for itself first
Since October 2024, the law says 100% of tips go to your team – fairly, on time, on record. Get the treatment wrong and it quietly costs you: make a service charge contractual and run it through payroll and you can lose the VAT exemption and trigger employer and employee NIC on the whole pot. On a £4,000 month that's over £1,400 gone that could have reached your team.
Mise tracks the tronc daily from your POS, shows you the right treatment in pounds before HMRC does, and generates the tips policy, distribution statements and three-year records the Act requires.
2026/27 rates: VAT 20%, employer NIC 15%, employee NIC 8%. Income tax is due either way, so it isn't counted. Assumes staff already earn above the NIC thresholds.
Always current
Minimum wage, employer NIC, VAT, pension thresholds, the Tips Act – every rate and rule in Mise is tracked against legislation, and an update ships every time one of them changes, not just each April. Every figure in Settings carries its effective date, so you can prove exactly which rules you applied, and when.
Why operators keep it
Who it's for: independent and small-group operators, GMs and ops managers who live in spreadsheets, and the bookkeepers and accountants who want one clean tool across their hospitality clients.

From the founder
“I've spent years running bars and restaurants – the late-night stock takes, the tips divided out on the back of a till roll, the folder you pray is up to date when the inspector walks in. Mise is the platform I kept wishing someone would build, so I built it: everything a venue has to get right, finally in its place.”
James Hewitt · Founder, Mise
Pricing – yours to keep, updates optional
Pay once and Mise is yours – it keeps working forever, on your machine, with no login and no monthly meter running on your headcount. The optional yearly update keeps every rate and rule legally current as the law moves: minimum wage, NIC, VAT, pension thresholds, the Tips Act, the incoming shift-notice rules. Skip a year and nothing breaks – you simply update again when you're ready.
The maths landlords do in their head: rota-only software runs about £2.50–£5 per person per month – a 15-strong team is roughly £630 a year, every year, for scheduling alone, climbing each time you hire. Mise is £199 once for that plus tips, stock, GP, food safety, cash-up, maintenance and ten more – then £49 a year only if you want the legal updates. Less than a quarter the price; fourteen times the tool.
Own the app for good; the optional yearly update keeps every legal rate and rule current – shipped whenever legislation changes, not just each April. Miss a year and Mise keeps working; resubscribe whenever you like. Not tax or legal advice – a planning and record-keeping tool that helps you get it right and prove it.
